How exciting. I used Pages to create the Kindle versions of my books. It was fairly easy. Just use one the book templates (you can modify them), then from the File menu select Export. Choose ePub.
It has been a few years, but if I remember correctly, you do not want to add a cover, you do that in the Amazon Kindle Direct publishing form. The Amazon part is by far the most difficult part. They really need to update the process and make it easier. But you basically upload the ePub and the cover image and go through the forms. Then publish.
I know Pages created a table of contents for the book from the Insert menu. And it even created the digital index for Kindle. But I don't recall exacty how. I am sure with some searching, you can find the answers to how to do it.
I didn't use Kindle Create at all. It looked too complicated and too Amazony. Pages made it easy. I used Affinty Publisher for the paperbacks.
